EC Blend Dragon's Brew and Dragon's Cafe are my two favorites. I have coffee flavors from a lot of vendors, so I take all the ones that are pretty good and blend them in a 50ml bottle. I have vanilla frappes, caramel cappuccinos, mochas, and a bunch of other stuff mixed together. At some point it became really tasty and probably the best coffee vape I coud imagine, so I stopped adding to it. So I use that bottle and the ECBLend varieties with a touch of halo Belgian Chocolate.
I haven't noticed such, but I do a lot of bakery nom nom desserts. I don't think I'd try fruity things with coffee though. *hurr*
When vaping while drinking coffee, I usually stick to flavors that would taste good IN the coffee. Caramel, vanilla, irish cream, etc. If you wouldn't consider mixing the flavor into your coffee, it's probably not going to taste good when vaped either. The only real surprise I've had was that I really don't like coffee flavors with my coffee... Tried a cappuccino that I thought was going to be perfect, but it just wasn't right.
I vape a DIY menthol exclusively. I have no trouble with coffee (and I do use Stevia and creamer) and have my obligatory 3 to 4 cups every morning. But after that I drink only water. I used to try to have an occasional soda...root beer, Dr. Pepper, cola...but the taste interfered with my vape. I also had to give up drinking wine. That interfered, too. And NOTHING ought to interfere with my vape!!!! 
Funny thing..food doesn't seem to effect things the same way. I can eat all the foods l like and my beloved menthol is just fine afterward.

Banana/coconut/bavarian creme/sweet cream/graham cracker juice along with my cold brew ice coffee is just the greatest thing.

Yeah, I can't find anything that goes well with a Coke. That's the only kind of pop I drink though, so I'm ok with not finding a match. I guess I tried my caramel apple with Coke and it wasn't bad now that I think about it.

I used to love Caramocha Twist from Revolver, but I don't even know if they still have it. Been a long time since I've had any of that.
I vape almost exclusively tobacco flavors, but have noticed too that my coffee (I take it with 1/2&1/2) definitely affects the flavor of what I'm vaping... My solution? Cut way back on the coffee...
I drink Diet Dr. Pepper, but I like vaping Cherry, or Vanilla, or a blended Cherry Vanilla with my sodas
If I vape blueberry my coffee tastes exactly like the Keurig K-Cup Blueberry flavor which is yummy. JMO
when having a shot of red stag i noticed it gave my minty orange a real pleasent after taste.

I don't know what Reg Stag is, and I can't tolerate anything with the smallest hint of mint.
However, in general, I do agree that a lot of vape/drink combinations can be very habit forming. I love to vape cherry with my Dr. Peppers... Add a bit of vanilla juice to the cherry and it's even better.
And vaping banana with anything chocolate, or peanut butter (milkshakes mostly) is pure nirvana!!! Then, of course there's the tobacco vape with my coffee... And a good chocolate vape goes great with Orange juice!

Unfortunately, my diabetes forced me to give up all alcohol a long time ago
I had a double espresso today - first time drinking coffee in a long time, and my Smooth Criminal tasted pretty good with it.
