I actually smoked that roast yesterday. I wrapped it at the stall at 165 and brought it to 198 inside of 6.5 hrs. Very tender pulled pork, bone fell out. All the pit masters say you have to smoke at 225 for 10.5 to 12 hrs for that size roast to get it tender. I'll never again do a 10-12 hr slow smoke on one, from now on it's 300 for 6.5
