Okay... been 4 days and it's starting to taste a little better however it's still lacking that creamy toffee yum yum. So i am going to make another sample and up the ET by1/2% to 7% and up the Sweet Cream another 1/2% to 1.5%.and I think that will do it. Or does one think I should wait a few more days to change anything?

You have come a long way from the first burnt tasting batch and I think your getting a handle on fine tuning it. I'm glad to see you are making good progress. I know it gets fustrating at times expecially the waiting but keep at it.

Creams take a long time to steep and I don't think you gave it enough time. Give it another 4 days. You have a lot of ingredients in there that need time to meld together.

Don't add anything else for 4 days.

Hoosiers suggestion about making a new mix with the final recipe is a very good one. You don't need to discard what you have now but a new sample will give you a good comparison of the final recipe Vs what you have now. They will be different.

Okay... Tried version 4. It's just not what I'm looking for, which kinda bums me out with the amount if time into it. Do y'all think I might just have too many ingredients in there?

I may take Danny's Chocolate Dream Bar Mix, which by the way is very good, and try adding some peanut butter in it. Start over on a new path so to speak. I think maybe the English Toffee in the original batch may be altering the taste away from what I'm looking for. Whereas the Hangsen Toffee is just toffee, which may be what I'm after.
