High VG on my setup?

I run 20/80 in my Lemo 2s when they are coiled subohm-- they usually are-- and wick rayon. I honestly don't have a problem. I've been wondering why, too; I have been told many times I'd have to mod the tank to open the juice channel. So, I was ready for it-- my middle name is Dremel Tool-- but it hasn't happened. Go figure, right?

80/20 is verging on max vg territory, but it's all about preference. My Kayfun is wonderful right now with a 90/10 Madrina clone.

Another noob question for you all . . .

I picked up an Evic VT thanks to recommendations here. Didn't really care for the tank so got an Atlantis tank and a Vaporshark TC coil from my local shop (and yeah, paid too much but I wanted it now!). Started vaping the Chocolate Mousse from Charlie Noble and OMG freaking amazing but NOT an all day vape, even for chocoholic me - tastes intensely cocoa cheesecakey, or something.

Anyway, this is my first foray into TC but also my first experience with sub ohm, so I'm pretty much blown away.

Shop guy, knowing all this but also my flavor profile, says next time I need to get some Max VG of a liquid that's already a flavorite of mine. First shop I used (that I don't go to anymore) had told me Max VG was only for drippers, but this one says it's fine for sub ohm. Which is so?
70-30 vg is best for sub tanks. I quoted this post for a different reason. Are you saying that the Charlie Noble's Chocolate Mousse tastes like chocolate cheesecake? OMG, if so, I'm so on that!

May I know why no more than 5%? Because I have recently added about 10% of boiled filtered water in 85vg 15pg juice, will it cause any problem? Health? Equipment?
No, there will be no health or equipment damage; apologies if that worried you. In fact, some people quote 10% rather than 5. Rather, it just doesn't work well. Too much water can cause pops at the coil and inefficient wicking. Water just isn't a good fluid for e-cigs, it does not vaporize smoothly or evenly, like the PG/VG mixture. I don't know why, but I know it is so.
