By the nature of your desire, you are likely going to be best served, focusing on DIY.
In general, commercial e-liquid vendors/manufacturers are always going to be concerned with profit, in order to stay in business. This means catering to the most "popular"flavor profiles. In other words: candy, fruit, custard, bakery, and tobacco. Not sandalwood and patchouli... <shudder>
If I were you, I would start by perusing the flavor concentrates, of the flavor manufacturers you can access easily in the Czech Republic, and look for unique/uncommon concentrates. As just one example, Inawera (Poland) has some more "off-the-grid" flavors like: (Star) Anise, Clove, Exotic Roots, Purple Rain (violet vanilla), Rose, Sesame, Smoked Plum, and Woodruff. Those are just the ones that caught my eye (as "different") under their "
Fruit n sweet" category.
I have their Fresh Mint(WG), which smells exactly like fresh crushed mint leaves (vs. gum or candy). It is so realistic, I haven't figured out how to use it yet (other than a mojito component). I have fond childhood memories, of sucking the nectar out of honeysuckle blossoms, and have found a couple satisfying vapes using TFA Honeysuckle.
Flavour Art(Italy) is another one that has some interesting offerings in their "
savory" category. Get concentrates of Bread Crust, Tomato Ripe, and Basil, along with Wine Red, and either Barley Malt, or Soy Sauce (to get close to a balsamic vinegar) and you could be on the road to a bruschetta... no? That sounds plenty hipster to me.

It is just going to take an open mind, some creativity, effort of course, and a willingness for trial and error.

PS. If you really are looking to do a "cough syrup" type; I would start with a base of cherry (or raspberry), and licorice. I would probably consider an absinthe flavor concentrate for the ethanol bite as my licorice. A touch of menthol might be good; and horehound should take it in more of a Vick's 44D/Jagermeister direction.
Horehound, honey, and menthol should get you a Luden's classic cough drop. Inawera Eucalyptus might be interesting as well.
