I just started vaping and I am wondering how I can tell when a cart is empty? I vaped a cola one for about 2.5 hours when I first got it and then another hour the next day and there is still a lot of vapor, so how can i tell when they're empty??

That's exactly how you know it's not empty! If you're still getting plenty of flavor and vapor, you're good to go!
If you plan on refilling, I recommend adding liquid immediately once you notice a decrease in flavor or vapor. If you keep vaping after that point, you run the risk of burning your cart. If you're not refilling, just keep on vaping until it won't vape no more!
