Can that add water to it?

No. You would only need to worry about this if you were moving the juice from a warm environment to a cold environment back and forth many times.

Can that degrade nicotine?

If anything, the nicotine is preserved and in better shape than had you left the bottle at room temp. DIYers often put their nicotine in the freezer for long term storage in order to minimize breakdown and oxidation.

Overall, the juice should be just as good as before. Just be sure to allow it to warm up a little, as the cold will make it less viscous, so it won't wick as well.
