I've read people say coils last for months, others say longer. I have a coworker who has local b&m build his once a week, mine seem to still be good after a few months, any opinions on noticeable difference with coil getting old.

Hehe. Same here. Between the 3 tanks I own, I only rebuild one maybe every 2 months. I usually forgot what build is in them. Last 4 months, ben writing down what build (s) are working well in each tank. Have a sticky in the build drawer with notes/builds for each tank (cloud build, flavor build, perfect in-between build, or super battery efficiency build)Fast forward to today where I label all my tanks with what builds are installed I rarely rebuild.
Funny you should ask. Coils are made of what? Wire? Metal that gets hot?
When starting out I rebuilt often. Usually the build I tried did not work as expected or I wanted to try something else. Later on I would rebuild because for the life of me I could not recall what TC wire I built with!!
Fast forward to today where I label all my tanks with what builds are installed I rarely rebuild. Sure I might pull the wick on a gunked up coil, dry burn and rewick but that does not count in my book.
Unless I fubar the coil while removing the wick to dry burn I can't see any reason to wind up a new coil just because the old one has been in use for some time.
While some builds get gunked up quicker than others I don't think I've ever had a coil outright FAIL and need to be replaced.

Does depend on the thickness of the wire though.
I don't see any reason why i'd ever change a coil i built with 25g. Why change it ?, could last for years. After a dry burn there is a brown powdery substance covering the coil which i just remove with a tooth brush. The coil is as good as new after that.
On the other hand i use 32g in my Kayfun V4. That will actually only last me maybe three or four months but only because it's so fragile that when it comes to re-wicking it can get a little tricky cleaning it. Eventually it gets too damaged to continue using so i'l just build a new one. Three of four months isn't bad though.
I use 28 gauge in attys you trap wire under screw heads (Kayfun, RBA of tge subtank Mini, SXK Nebula wine)
25-26 gauge in attys with Post holes (Goblin Mini, Silverplay nano, Orchid, etc.
