villarino the Iatty in MHO has the best taste of all of Imeo's creations. Now back to your issue. First off 3mm wick is too thick for the Iatty because the slots in the ceramic are narrow which will cause improper wicking. Use 1.5 or 2mm silica at most and I also recommend Nickel 32 non resistance and Nickel Chrome 34 gauge for resistance wires. Screw on the bell housing only half way and fill the Iatty up to the top of the bell, not higher up the thinner part.
Measure your resistance to about .9 -1.1 ohms and I assure you you'll get a first class vape

BTW if you have a funky taste and your ceramic isn't clean (dark color), remove the ceramic and fire it with a gas torch. It will turn brilliant white and look like new. I fire my ceramics about once a month but it also has to do with what e-juice you use. Some leave more gunk than others

you think it would be okay keeping my 30 gauge kanthal and silver wire and just switch the 3mm to 1.5 or 2mm silica? Reason why i wanna stick to silver is because ive tried nickel and it gave me a weird taste to it. thought it was just my build but ive built my ithaka many times with both nickel and silver, i could definitely taste the difference. Thats just me though. As far as the ceramic being dirty, not possible cuz its brand new. I also let everything soak in hot water and soap for awhile then rinsed em real well.

I guess ill get smaller diameter wicks and test it out. I hear EVERYONE saying that the iatty is one of the best, and thats the reason i got it. But as of right now, the ithaka takes it by far! Ill come back with some results once i get more supplies.

thanks for the info man!

Ok if your ceramic is brand new then that's the problem. It was a known problem with new ceramics with leftover residue from manufacture. Just torch it well, let it cool and use the same Kanthal/Silver wire setup
