This is something of a comedy, and you don't fish for them one at a time with a hot dog on fishing line.
You cast baited nets.She only washed them off to get mud off, and didn't purge them in salt water to clear their guts. Eeewwww!!!
You don't pull the whole tail off like she did, but rather, you pinch it there with your thumb into your curled index finger to get the meat loose and roll your thumb forward to break the meat loose. Then hold the tail and pull out the meat after first breaking the front shell loose like she does, pulling it from there. The tail is great to hold on to. Thus the term, I pinch the tails.
It's a lot easier this way. Pulling the tail off like that would only slow you down. I don't suck the heads like that guy did, but that is sucking the boil juice out from there... not brains and such. HA! Some people like that, but the meat is hot enough and juicy enough for me. There are Crawfish Boil T-Shirts that say I pinch the tails and Do you suck the heads? And Yes, the corn, potatoes, and sausage are very spicy with the boil juices. A second batch won't be as spicy, so more Zatarain's is often added after a first boil.
