What is the difference between "unprotected" and "protected" batteries? Like I have a 4.7volt 800mah AW battery and a specified "unprotected" 18350 700mah 3.7v trust fire battery. What is the difference and how should I be the most safe using the unprotected ones?

Protected batteries have a small circuit board.

I use AW IMR batteries and a Pila charger, I only purchase them from an authorized AW seller (Authentic AW Batteries at RTD Vapor). When I first started using these batteries, I used a multi-meter to check them during use and off the charger until I was familiar with their performance. You don't want to drain an unprotected battery.

Until you have read and understand the dangers of your batteries, (from op, I should say you do not.) Please do not use them.
