Tonight is Linguini with white clams. Olive oil, 6 to 8 cloves of garlic, saute just a bit, then take off the heat, let the oil infuse with garlic. I have also added bacon, but not anything with heavy smoke flavor, pancetta works great.

When the pasta water is near boiling, take the pan with the garlic, oil, (bacon). add the liquid from 2 cans of clams, plus a good shot of white wine, a pinch of red pepper flake (really a small pinch, that stuff I got is mad hot). Bring up to bubbling to reduce. I usually add a bit more garlic, cause the first dose looks played. Linguini into the water, 9-10 minutes, but at the 5 minutes to go mark, toss the clams into the sauce. Drain the pasta, add it into the pan with the sauce with 2 or 3 pats of butter, and toss. Onto a plate with some parsley as garnish!!!

Thinking Malibu will finish the meal nicely. Maybe I'll try some kringles...

Last night was a DIY pizza, nuthin speshul.

Tonight, prolly grab some chinese on the way home since imma workin late.

But the weekend....oh the plans.... my first run at my Thanksgiving Dessert. Caramel Pecan Pumpkin Mousse Pie with Gingersnap Crust. I always make one pie just for me, and if it works, then i'll make another for Thanksgiving Dinner with the family. It's a new recipe for me this year...i dont know if i can pull it off..../cue dramatic music but i have to try. I cant just walk away from this..it's too important. If i dont make it back...then when you speak of me to your children, and you will, speak well.

hhmm, very bold goals there, wheese. Are the mice parboiled? Or roasted then deboned?

Thanksgiving meal plan:

me and my step dad are jioning forces Wonder Twins style to make dinner for the whole fam, (form of: guy thats technically not allowed to be within 500 feet of open flames!)


i got all the supplies for a good 'ol fashioned turkey fry, as long as it doesn't rain we'll be good to go. also, i'm always in charge of desserts, cuz i know whats awsum. this year: Caramel Pecan Pumpkin Mousse Pie...i finally got the mousse to not be so....soupy.

pop takes care of dressing, taters, gravy, breads, etc.


then it will be a long day of Killian's Irish Red, football on T.V., and TONS of Tribeca with just a smidgeon of Kringle's Curse and Malibu. followed by moar Killian's Irish Red and a celebratory 2-fingers of Lauphraig 14 year old quarter cask for a meal well done.

The wimmen folk clean, thats the deal. then they head out for the "Black Friday" madness.

The wife is making the pumpkin pie to take to my parent's big feast. She is an amazing cook.

Diva, you'd love this: We're making a whipped cream laced with some raspberry Chambord. It should be a light purple color. It'll go over good vanilla ice cream with a splash of Chambord over the top!! Who knows, Mom is making a chocolate Mousse, and the "purple haze" would probably kill with a dollop on top.

I'm taking multiple tanks with me, Torque, VooDoo, Malibu, Belgian. I think the Voodoo will work after the meal, but counting on Torque to get me through cocktails, beer, football, horse divers.

Thanksgiving went off exactly as i planned...even down to the eventual family meltdown due to Uncle Barry's revelation that he lost so much money with his private equity trades....i think his choice of shirt didn't help his case.


point being...fried turkey, all the fixins, one of the best pies in the history of the world to date (all 200+ years at least i hear)! some scotch, some Killian's Irish Red, some football....and lots of Tribeca.





Now, time to prepare for the ultimate Xmas feast. Kringle's Curse, dont let me down.

Glad to hear, Wheez. Fried Turkey is the best. (peanut oil? Love using the turkey fryer. Last super bowl killed with wings, cause you can do a boatload at once, but best to do them for 4 minutes, then take out (keep warm), do the next batch for 4 minutes, then let the oil come back to temp, then finish them. Very crispy!!)

The wife puts a hint of nutmeg in her pumpkin pie, and makes sure all other spices are fresh. Amazing! And the purple haze Chambord Whipped Cream was totally gone in 4 minutes atop a thick dark chocolate Mousse.

Torque and Malibu worked flawlessly. A very good Holiday.

(made better when I got my 15% vapemail Saturday. Variable Volt is amazing!!! And I think neccessary to dial in VooDoo. I can't wait to re-taste my other juices)
