Taste and flavor is a really subjective thing.  But, early on I realized that I was rushing my whole "steeping" process.  I buy in "blocks"  of juices now.  Three bottle from here, two from there, 4 from another place, half are ones that I like and half are new ones to try that I hope I like.  Anyway, I really don't start another group until the last group is done.  I have my current batch, the batch that is halfway steeped, and the new batch that I just received.  A batch lasts me about 2-3 weeks, so that means the batch that I just got is 5-6 weeks before it gets into a tank.  Sometimes I will use a dripper to try flavors to see if I am happy with them, but less so anymore.
I just got Grandma's Cinnamon Danish (Nicoticket) and he said he steeps his for 6 months.  Really, that just told me that I shouldn't rush.  I warm most in a crock pot for 6 hours, then the top comes off for 24-48 hours for the alcohol to evaporate in a drawer (darkness).  A lot of covering the top and shaking during that time, as in 5-6 times a day.  Then it is just leaving it in the darkness until its time.  Just patience.
I noticed that the flavor quality really went up.  Just works for me.
