I have been doing pretty good with the single flavor DIY's and was wanting to do a little more complex one. It's my take on a non-alcoholic banana's foster. I will be using just 3 flavors.

TFA ripe banana
TFA caramel candy
TFA Bavarian cream

In the single flavors the Bavarian cream seems good at 6% but I can't really tell a difference in the Banana between 6, 8, or 10 percent. And I know that when combining flavors you have to play with the amounts.

So anyone familiar with these flavors what would be a good starting percentage for these in this recipe. My goal is to have the banana show through but not overpower the caramel and the Bavarian cream just there to smooth and mellow it all out.

I'm not a banana guy, but I've mixed some banana stuff for a friend.

Keep the banana low until you've let it steep for a week. It tends to be one of those that hangs out in the background and then come flying to the front obliterating everything in it's path. So if it's good at 6, keep it there until everything has a chance to meld and see where it is after a bit of sitting in a dark cabinet in a sealed bottle for a week.

Thanks bunches both of you. Steeping wont be a problem, I just found what was left of a whole case of 15ml amber glass bottles. Bought it years ago for mixing ink and never used more than 20 out of 144. So the rest are now my DIY brew bottles. Needless to say I was overjoyed at the discovery.

The Banana I know has an ethyl alcohol base to it, any recommendations on a cap off time for the beginning of the steep.
