If I buy this, what battery you reccomend?

It's going to depend moreso on your choice of tank and an idea of your required wattage level. If you don't vape it at high wattage, you can get a battery that'll last longer, for instance.
Have fun, seems like a great setup if you get the tank that goes with it.

I recommend (and am currently using) Sony VTC5s that I bought from Orbtronic.

I'm typically getting about 2 tanks per battery at 40W. But I'm going through around 4 tanks per day... LOL

Well, if flavor is what you crave, and if you want to try out the latest and greatest, I recently received a mod/tank combo that is very new on the market and I am VERY pleased and impressed with it. It uses replaceable coil heads, so no worries about having to learn to rebuild. It also uses a ceramic wick/coil set-up that is giving me the absolute best flavor I have EVER gotten out of a vaping device. And I've been vaping for over 6 years! As an added bonus? It can also use coil heads from the Aspire Atlantis, the Melo 2, and a couple of other tanks... The mod is 75W capable, uses a replaceable 18650 battery, and has temperature control function (with the nickel heads only).

I do know that they carry some authentics, as well as a LOT of clones. From everything that I can tell, their Target mods are authentic. Shipping will take quite some time though.
If you want super fast shipping, then go with Heaven Gifts They currently have White and Purple kits available. I can guarantee their mods are authentic, and they have the nickel coils here: Nickel cCells.
Unfortunately, the Kanthal coils are still pre-order....

Ok Im back, with more questions.

On Reddit I had a couple people suggest eVic VTC Mini, and the Cuboid. Anyone have anything good or bad to say about those mods?

Another possibly stupid question. Do 'most' tanks fit on 'most' mods? For example if I wanted to try the Tank the target has, but I wanted to buy the eVic or Cuboid instead, would the tank work with them? How do I check to be sure?

I have no experience with the eVic or the Cuboid, so I can't really say anything there.

But, for your second question (and there are no stupid questions), yes... 'most' tanks fit on 'most' mods... usually you can double check the threading specs. What you are looking for is "510 thread"... that is the standard and it is what the vast majority of tanks and mods use.

I am pretty happy with my Tank choice, but... Tanks, just so many good ones out there. The two I listed, I also hear amazing things about the crown? What are some 'must try' tanks for someone who plans on just buying coils not building their own?

I've only heard praise from those tanks and mods you've picked, I haven't used anything except a iPV3 Li, couple of handmade mods and mechmods personally, so I don't personally know what the Cuboid will be like. As far as tanks go, nobody likes them all. I personally love my modded Bellus and it's pretty much all I use, except for random dripping or rebuilding my Kraken genny.

I'd say you've made some pretty good choices with your picks. The Cleito looks interesting, I like how they've designed it to get rid of the chimney by extending the coil housing. Let me know how it works out for you... good picks, man!
