Hi and welcome. I DIY. Accurate measurements are required, and some work to balance flavors in your recipes, but aside form that, once you get a recipe you like, it's no harder than mixing the ingredients to make a cake.
I would try the fruits at about 12% plus 3% sweetener for starters. Make small batches, no more than 10ml or so, so you can taste them and adjust. The cinnamon flavor would be good alone, or mixed with the apple; try about 8%apple, and 3%cin and 3%sweet for starters.
