30 is as small as I would go...

The best way to learn is to wind up a few and give it a shot. It is a lot like riding a bike in that you have to do it to do it.
I'm definitely going to give it a go
Pretty sure I won't get it right the 1st time but practice makes perfect
Any gauge suggestions that are easier to build
I got a pretty nice size deck also

I generally only build 28 now, but 30 is not so much difference. Smaller wire, more resistance and that is the only reason people vary the size. 30 is fine to start out on. I started with drill bits as a mandrel and it make it easy. The fun part comes in building a contact coil where you use heat to set it. Since I only do nickel now, that is moot.

Ok
Another question us there much of a difference in flavor and/or vapor production between kanthal and I'm taking a guess NI200? Or is it pretty much the same except the nickel is pretty much for temperature like I have heard

Flavor will be impacted by your type of wick material more than the metal that is heading, that said, you may pick up nuances based on coil metal. Some prefer titanium. You really need a coil building mentor for your first time out of the gate. Your location is not listed, so my best advice is to go to your local vape shop and ask them to show you a build from start to finish. It is really easy, but it helps to get a good start on it. In reality it is nothing more than wrapping wire around a mandrel of sorts, then connecting the ends to your posts, adding wick material. The issues come in getting good vapor production, good juice flow and no leaks in the atomizer if it is a tank one. For drippers, it is moot as you are not dealing with a tank. Drippers are a great starting point. An hour on YouTube and you will know all there is to know about building a coil.

Do some research, figure out which coil and resistance would be to your liking, and build away. For a beginner, I would recommend a standard single or dual coil build (no need to start with parallel, twisted, clapton, dual-monkey-....-quad-tail, etc...standard coils are just fine).

This should get you started:
