I think it is going to come down to your personnel preference. What type of juice you use will be effected by the voltage. I rebuild my heads at 2.0 almost exclusively and usually vape lighter non-tobac juices...
For my set up I use anything from 3.7 to 4.2 volts... anything lower is quite week and anything higher tends to taste burnt. But again your juice plays a big part in this.

Why do some people prefer higher ohms as opposed to the lower ones?

All depends on whom to speak with. Last week, I was at a local vape meet. Most of the kids were running very low sub ohm dual coil dripping atties. I moved to the other side of the room.

When regulated, I like mt coils coming in at 2.0Ω to 2.5Ω. Non-regulated, I like my coils between 1.2Ω to 1.5Ω.

Everything's pretty much been said, it's pretty much an individual thing. You can pretty much go simply by taste and temprature.
If your hit is too weak, slower draw or higher heat. If it tastes burnt or your connection area/head area is getting very warm then most likely too hot.
