Hello all!

Now i know i cannot be the only one on here who loves food! We have to have some pretty good cooks on here who would LOVE to share their knowledge and swap recipies and ideas!

How about it? I will be coming up with some of my favs to share with everyone.. with the summer months coming up--everyone will be grilling and having those outdoor picnics and fresh easy meals are the way to go! so pull out those cookbooks and put on your chef hats and let's talk cooking!!!!

What do you say???

ok.. i got an easy one i can share right now!

Fruit Pizza

Get a tub of Cool whip and a box of Instant Pudding... vanilla and cheesecake work the best..

Wait until the cool whip is thawed and mix in the box of pudding... beat with a mixer for a couple of minutes until it's kinda cream cheese consistency..

Then get sugar cookie dough however you normally get it. (premade in the grocery or make it yourself) and spread it onto a round pizza pan or pizza stone. Cook this until the cookie is done. Cool

Spread the cool whip topping onto the cookie like pizza sauce.. top with fresh fruit like bananas, strawberries, kiwi, grapes, apples, whatever you like.. mango - papaya.. whatever -- you could even use shredded coconut as "cheese" if you want.. whatever you like..

drizzle with chocolate or rasberry sauce (optional but it looks pretty)

Cut like a pizza and enjoy!!

I don’t use recipes, I just wing it

But I just bought a new grill on Friday and I made this bbq sauce, it’s really good.

Sautee in olive oil- (garlic, chili’s, ginger root, and whole coriander) 4min
Add some soy- 1min
Add (tomato paste, sugar, crushed red pepper, cracked black pepper, cumin) 2min
Add orange marmalade- 2min
Add rice wine vinegar to make it the consistency of a sauce- 3min

Use a dry rub of (kosher salt, black pepper, brown sugar, smoked paprika, garlic powder, and cumin) on chicken or pork; BBQ
10 min before meat is done add sauce

As I said I don't use recipies and I don't own any cookbooks

but this is the one book I own, I highly recomend it, it's a book which focus' on technique

I love Biscotti, a twice baked cookie that's hard. It's meant to be dipped in coffee, tea or wine. I am posting an orange recipe here because I am a southern girl and like my oranges and pecans! I sub pecans for the candied orange and skip the Grand Marnier. The dough is very sticky so wet your hands before handling. I can't post my own recipe because I wing it..lol But it's like this.
From About dot com:

Ingredients:

  • 1/3 cup butter
  • 2/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 eggs
  • 2 1/4 cup flour
  • 3/4 cup candied orange peel ( try pecans instead)
  • shredded peel from 2 oranges
  • 1 tbs Grand Marnier (optional)
Preparation:

Beat together butter, sugar, baking powder, baking soda until smooth. Add the rest of the ingredients and knead dough until smooth. Shape into logs 2-3 inches wide, flatten slightly. Bake on a sheet at 375F for 20 minutes. Take out of the oven and let cool for half an hour. Slice log into 1/2 inch thick slices. Put slices back into the oven at 325F and bake for another 8 minutes on each side.

You will need:

4 racks of pork ribs, your choice.
1 can of chipotle peppers in abodo sauce (small can, use 2 if you like HOT)
5 large RIPE mangos
6 bay leaves
2 medium yellow onions
5 or more cloves of garlic
1 bottle bourbon (1/2 for the ribs, the rest for you and fam/friends)
1/4 teaspoon of allspice
1/2 teaspoon mustard powder
1 cup sugar
1/8 cup molasas
Enough kosher salt to dust ribs
2 cups water
2 large baking pans
BBQ!!!


Dust the ribs on both sides with kosher salt, allow them to sit in the fridge for about 30 mins to let the kosher salt do its thing. During this time, skin and cut your mangos, onions, mince garlic, and make a couple of drinks :p

Set oven to 275 to preheat. Remove ribs from the oven and sear them on each side to lock moisture in. Once seared on griddle or alike cooking surface, move ribs to baking pans. Add mangos, onions, bay leaves, bourbon, allspice, garlic, chipotle peppers and sauce, and split water between your baking pans.

Start your grill! Might want to make another drink at this point, if you havnt already.

Bake in oven for 3 hours. Remove ribs from oven, remove bay leaves from baking pans! Move pan drippings and all ingrediants into a blender, add 1 cup sugar, 1/8 cup of molasas, and 1/2 teaspoon mustard powder, and blend until smooth.

Move ribs to bbq surface, coating them with the blended sauce. BBQ only a short time, until the sauce carmelizes. About 15-20 mins max, depending on bbq heat. Try to prevent the ribs from burning, you simpily want to carmelize the sauce.

ENJOY!


** For less heat remove the chipotle peppers before blending your sauce.

It is very good, if you want to be really decadent, try dipping the end in baking choc (the kind that hardens). I also hve a choc recipe if needed.
Malice, have you tried the flavord coolwhips? Choc and Strawberry!
K sound, I gave your recipe to hubby..he said "Do It"! He loves BBQ.

oooh.. you can also make a nice hardening chocolate by melting together a bag of regular chocolate chips and a half of a bar of parafin... it hardens really nice..

and i have seen it but haven't tried it yet.. the strawberry sounds pretty good!!

an edit for 40- if you use the wet or dry method it does the same thing, it's just an alternative way to do it, this is about cooking tips and tricks not a debate over which is better

I was gonna suggest for your ribs, instead of putting them in the oven for that long

You can fill a stock pot with cold water and whole spices, such as bay leaf, peppercorns, corriander, cinamon stick, etc;

bring the ribs up to a boil, cover and turn the heat to the lowest setting for 40-60 minutes, does the same thing as putting it in the oven, breaking up the connective tissue around the bone


*note- it not only get the job done faster, but it's actually a lil bit better then the dry oven method because it keeps the meat hydrated while cooking

Another tip is to seek out ethnic markets in your area, especially Spanish and Asian markets; they not only have cool unique stuff but its dirt cheap

For instance the grocery store sells a bag of 3 shallots for $4
The Asian market sells a bag of about 15 shallots for $3

Some sauces I recommend picking up at an Asian market are
Nampla, Thai sweet chili, oyster sauce, black sweet soy, ponzu, mirin, and siracha

Spanish markets are usually good for buying cheap pork, and they literally sell every part from tail to snout
Also if you like cilantro, Spanish markets usually sell culantro, which is 10x stronger

Yeah I like dozo crackers and the hot and spicy shrimp chips

One other thing I'd pick up is palm sugar, it's sweeter and stickier then brown sugar as well as being more complex

Also if they have MAMA brand raman, it's really good
especially when fried with sautted shrimp and a japanese style omlette

Skad another thing that's supa cheap is Panko bread crumbs a small box usually costs $6,
at the asian market you get a huge bag for under $2 and it's better quality to boot

(makes around 80 balls)

1 jar Peanut Butter
1 lb. confectionery sugar
3 cups Rice Krispies
1 stick butter


1 lg. bag chocolate chips (or 1-1/2 regular sized bags)
3/4 square paraffin wax (you find it in the aisle with canning supplies)
wax paper


Melt the stick of butter in a large pan. Remove from heat. Add Rice Krispies, sugar and peanut butter. Mix well and shape into balls about 1" diameter. Set balls on wax paper (they stick to anything else).

Using a cheese grater, grate or shave 3/4 of a stick of canning wax. Combine wax and full bag of chocolate chips into a corningware type dish and microwave for 2 minutes. Stir, microwave another 2 minutes, repeat this until chocolate is thin and runny.

Using a spoon, dip peanut butter balls into the chocolate mixture and set on wax paper. You will occasionally have to re-microwave the chocolate as it thickens pretty fast.

Refrigerate until shell hardens.

Easy and people love 'em :) If you have any chocolate mixture left over, you can use it to dip strawberries, etc.

Oven Baked Kalua Pig (aka "pulled pork")

Simple, yet yummy recipe!


  • 1 Large Pork ....
  • 1 Reynold's Oven Bag
  • 1 cup of sea salt
  • 1/2 cup of mesquite or keawe smoke flavoring

Preheat the oven to 350 F. Take your pork ...., rinse with cold water and rub in the sea salt. Let the salt dissolve for a couple of minutes. Put the pork .... in the oven bag. Pour the liquid smoke in and twist the top shut tightly, shake the bag up to evenly coat the pork ..... Put the tie on the top of the bag and put the bag in a 9x13 baking pan. Bake for 6-8 hours.

K- Regarding the ribs, ive tried boiling, baking, all of it. The baking method yields much more moist tender ribs than boiling them. Also, there is about a cup of water in each pan, and while covered, they stay plenty hydrated.

Boiling will also remove the sauce you end up with from this recipe, which is more or less the point. I very much prefer the baking method for tenderness, flavor, and moisture. A parboil does work, just isnt my method or choice.
