How long should this battery last?? I take it off the charger and my multimeter shows 4.2 but I could hit it just a few times and then it'll show all the way down to 3.0. And I have heard to never use a battery below 2.5

Something is probably wrong. Give us all the pertinent info please. How old is the batt, about how many times has it been charged, how many amps or watts are you drawing from it (or what is the typical atty resistance if it's in a mech mod), how low in volts do you typically take it before you swap in a new batt.

4.2 is battery voltage. You never have to subtract anything on a multimeter when measuring batt voltage.
When you measure atty resistance in ohms you should first touch probes and measure that resistance. If it's more than zero, you subtract that from subsequent coil resistance measurements.
i use 25R. usually it will take me two days use to go down to 3.5 V. that's when i recharge. if i use lower resistance, it uses up the battery quicker. when i tried .4 ohm, it lasted little less than a day to go down to 3.6 V. i usually use around .6-.8 ohm depends on the build.
