Brined some nice thick pork chops. Ya gotta try a brine. Mine is 1/8 cups of brown sugar, salt, and whatever spice blend you have. You can toss in whatever you like. Then 3 cups of water. Drop the chops in at least 2 hours before grilling. It makes them flavorful and mondo juicy. Grilled to just past pink inside.
