No hot spots at all. Oxidized and burned both the mesh and the kanthal. Wicks well, good vapor production, but it tastes like burning metal. What do I do from here other than throw this out the window?

I've been using the RSST for months and never had this experience. Flavor and vapor are excellent for me with the RSST, so you have to be doing something wrong there somewhere. Yours is the very first such complaint about it that I've heard.
Well you have given no details on your build at all, so it's hard to say. Assuming you followed the YT videos and all the advice on here in the many threads on the subject I wouldn't know where to start. Perhaps you should just pitch it and get something else.
I'm no Genny expert. Post up some pics and info on the build, and someone will be along shortly who can help.

-5/4 wraps, 28 gauge kanthal
-325 SS Mesh, rolled tightly (hole in the center, room for air around the wick in the wick hole)
-Halo's Kringle's Curse liquid (doesn't say the ratio on their site, but I'd estimate around 80/20 pg/vg)
-Rebuilt it twice now, same thing both times
-No hot spots (checked with and without a light on, even glow)
-Tilting while using it

Even I experienced the same for my 1st few builds on RSST. The flavor and vapor production was 10 times less than a $10 tank.
Tried oxidizing the ST mesh wick, tried micro coils, bought a mech mod to remove the hot spots, increased the airhole size., changed the coil from 30 to 28 and 32. But still no change.
Finally threw the ss mesh wick, and used a silica wick instead. Everything resolved, and now happy with the level of flavors and vapor production

I use a 400 SS mesh wick rolled tight with 26 kanthal 4/5 wrap for .7 ohm, and it works great for me. I've never yet gotten a metallic taste from my RSST. Not at all sure what the OP is doing that would account for that.

I find if you try to roll the mesh to where it "just" fits in the hole, you're going to have wicking issues along with some dry hits that taste pretty awful. Roll the wick a bit tighter and allow for some air flow through the hole. I think you'll be pleasantly surprised at the result.

Genesis performance is all down to the wick, if your wick isn't right it doesn't matter how good your coil is. When I first got mine it took me a few hours to get the wick set just right on my RSST but once I got it set it's a fantastic very flavorful vape, post some pictures of your setup and perhaps the experienced genesis users here could give you some pointers.
I tried SS mesh... went back to my silica/cotton setup... the mesh was okay but I prefer S/C alot better flavor
Post some pictures, one as clear as you can up close and another while it is glowing.
Gennys with mesh wicks are usually not easy to build, sometimes you have to struggle for a while before you get it. Among other things, I had to cut my mesh in a specific direction to get it to wick properly.

Sounds like the mesh wicking aint keeping juice flow up hence the metal taste,i use SS rope and its awesome,never did like mesh wicks.
I use cotton only in mine and have no issues. I never really liked using mesh as a wicking material anyways. Give a different wick material a shot.
Do you get any glowing coils with juice on the wick? You could have a hot leg or a wrap that doesn't have good contact with the wick.
Something that i am discovering, with different gauges of wire-- you need more tension when you wrap with 28, and alot less with 32. The SS mesh wicks are a huge learning curve--i have a pile of wicks with holes in them to prove it. It will give a great vape once you get it, but it takes practice.
Do it in the DARK lol. After you get your coils situated, and when you THINK everything is kosher, turn out the LIGHTS!! It is so much easier to see if you have an issue with your set up. Coil is like ANY coil on an RDA!! Should light up from the inside wraps out. Good luck, you will get it!!
