Why don't American dairy companies make "Creme Fraiche"? I know you can make it yourself a day ahead of time at home...if you buy cream and buttermilk. But....sheesh! and $$$$

Maybe just my location.

There's more than just "American Sour Cream" in this world. They could call it something else...Like "Tart Cooking Cream" or something.

1) I search stores for it outside my regular area
2) Pay through the nose

C.F. should be as ubiqutious as sour cream. It's just a different culture. It doesn't have to be identical to the French version. Just usable. I don't even want to debate one vs the other. Give it a different name. But sell it at a reasonable cost like sour cream. It's less tart and doesn't curdle when used for cooking.

I've made it several times in the past with buttermilk and cream. It's a "cheat". Not 100% identical, but acceptable.

ummm. thank the FDA? Last i heard (several years ago) it was illegal in alabama , because it's not pasturized, and thus deemed "not safe" . :facepalm:

Bah. They could make "Sour Cooking Creme" (note spelling change) right here in the USA as a functional substitue for the real thing. Same way they make sour cream, just use a different culture.

And meet all pasteurization goals. It's attitude. And maybe middle-man import markup $$$ in the way.
