Steeping Cap off what does this mean?

The last time I had to steep a juice because of an alcohol smell, I did 4 hours, put the cap back on, shook it up, still smelled it, took the cap back off for 4 more hours. Then it was fine, your results may vary, but I probably wouldn't leave it off for more than 24 hours, though I have no real reason to say that. It shouldn't degrade the flavor you're looking for, just allow the fumes to be released.

first off steeping requires that you have some kind of solid in the juice... like tobacco or tea or raspberrys in it..... aging a juice is the proper term
