I wanted to get this up yesterday for the K Derby but life happens.:lol:
Pineapple Mint Julep

directions:
1. Stir bourbon, chopped mint, and sugar in a small bowl. Let stand 20 minutes (to allow flavors to develop).

2. Meanwhile, trim, peel, quarter, and core pineapple, then cut crosswise into 1⁄8-inch-thick slices and transfer to a bowl.

3. Pour bourbon mixture through a sieve onto pineapple. Add whole mint leaves and gently toss to combine.

4. Divide pineapple among dessert dishes and spoon a little bourbon liquid over each serving.

Cook’s Note:
Process the bourbon, mint, and sugar in a blender to save time. And if you’re in a real crunch, pick up some presliced pineapple. This dessert can be made ahead of time and refrigerated, tightly covered, for up to six hours. A couple extra tablespoons of bourbon will ratchet up the flavor.KITCHEN COUNTER:

This is a very friend of mine recipe and picture.

Bacon Wrapped Tatortots

Ingredients:

Bacon, cut in half
Tator Tots
Pickled Jalapenos

Preparation:

Slightly defrost tator tots. Hold a slice (or two) of pickled jalapeno against it and wrap a half slice of bacon around it. Hold together with toothpick. Put on baking sheet and bake at 425F for 10-15 minutes, until bacon is crispy and tator tot is cooked through. These were great!! These can probably be done on the grill too....

I use the baby carrots thats already peeled and ready to use.
Roasted Carrots

ingredients:
2 lb carrots, trimmed and peeled
3 Tbsp olive oil
1 tsp salt
1/4 tsp pepper

Servings: 6
Active Time: 5 min
Total Time: 30 min

directions:
1. Toss carrots with olive oil, salt, and pepper. Roast at 450°F for 15 minutes. Reduce heat to 325°F and cook until carrots are soft and browned.

Overnight Blueberry French Toast

Original Recipe Yield 10 servings
Ingredients

12 slices day-old bread, cut into 1 inch cubes
2 (8 ounce) packages cream cheese, cut into 1 inch cubes
1 cup fresh blueberries
12 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
1/3 cup maple syrup

1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh blueberries
1 tablespoon butter
Directions

Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast

this probably is not an original idea but it is one i use frequently<br />

1 large pkg frozen cheese ravoli's<br />
1 can spaghetti sauce<br />
garlic cloves - to taste - minced<br />
1 medium onion - chopped finely<br />
1 lb lean ground beef<br />
mozzarella cheese<br />
parmesan cheese<br />
<br />
preheat oven to 350*<br />
<br />
brown ground beef, add onions and garlic. drain. add spaghetti sauce<br />
<br />
spoon a layer of sauce mixture onto bottom of casserole dish, then a layer of ravoli's. repeat until finished. <br />
<br />
sprinkle with mozza cheese and parm.<br />
<br />
bake approx 45 minutes<br />
<br />
*** this is just a basic recipe. you can add different things to it. the idea is to have a no fuss meal.
