oh boy...Oreo Cheesecake Cookies...these look so good...I've got to try them soon..mmmm..:drool:

Oreo Cheesecake Cookies

Yield: About 1 dozen cookies

Prep Time: 20 minutes | Bake Time: 12 to 15 minutes

½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup mini chocolate chips
1 cup Oreo cookie crumbs

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth and well-combined.

3. Add the sugar and vanilla extract and mix until the ingredients are well-combined. Add the flour and mix on low until the flour is incorporated. Stir in the mini chocolate chips with a rubber spatula.

4. Place the Oreo cookie crumbs in a small bowl. Scoop the cookies into about 1½ to 2″ balls and then roll in the cookie crumbs. Place the cookie balls on the baking sheet. Bake for 12 to 15 minutes, or until the edges are golden and the tops are slightly puffed.

5. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

Peach Crumb Bars

Yield: 24 bars

For the Dough:
3 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
1 cup (2 sticks) unsalted butter, cold
1 egg, lightly beaten

For the Filling:
5 cups diced or sliced peaches (about 7 peaches, peeled)
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup granulated sugar
¼ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

1. Preheat the oven to 375 degrees F. Grease a 9×13-inch baking pan.

2. For the Dough: In a medium bowl whisk together the flour, sugar, baking powder and salt. Use a pastry blender to cut in the butter, and then the egg. The dough will be crumbly. Pat half of the dough into the prepared pan. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.

3. For the Filling: Place the diced (or sliced) peaches in a large bowl and sprinkle with lemon juice. Mix gently. In a separate bowl whisk together the flour, sugar, salt, cinnamon and nutmeg. Pour over the peaches and mix gently.

4. Spread the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer.

5. Bake in the preheated oven for 45 minutes, or until the top is slightly brown. Cool completely before cutting into squares.

these are real easy to make but a little time consuming..its a great way to get your kids or grandkids to help you out

1 pkg brownie mix of your choice(i try and get on that has frosting in it)
1 pkg cream cheese
2 tablespoons apricot preserves
lots of fruit of your choice

mix as directed and bake in desired shape of pan. i baked the recipe in 2 pans

this will be your crust(you can also use a cookie dough).Set aside and cool at least 2 hours

mix cream cheese with apricot preserves(any kind of fruit preserves will do) and spread onto your crust

ARRRGGGG!!! The recipes in this thread are making me gain weight! I tried a couple and stepped on a scale this morning. *sighs* Here is yet another one I am going to have to try too... ugh I hate going to the gym but I may have to start finding the time if I keep reading this thread! ;)

•1/4 cup very finely minced onion
•1 small clove garlic, finely chopped
•1 teaspoon finely ground coriander
•1/4 teaspoon dried marjoram
•1/4 teaspoon ground mace
•1/2 teaspoon ground mustard seed
•1 teaspoon sweet paprika
•1 teaspoon freshly fine ground white pepper
•1 egg white
•1-1/2 teaspoons sugar
•1 teaspoon salt, or to taste
•1/4 cup milk
You can also also mix in any mice, rats, chickens or roaches like the larger companys they should be dead but not bloated.

Prepare the casings (see instructions below). In a blender or food processor, make a puree of the onion, garlic, coriander, marjoram, mace, mustard seed, and paprika. Add the pepper, egg white, sugar, salt, and milk and mix thoroughly.

Grind the pork, beef, and fat cubes through the fine blade separately. Mix together and grind again. Mix the seasonings into the meat mixture with your hands. This tends to be a sticky procedure, so wet your hands with cold water first.

Chill the mixture for half an hour then put the mixture thorough the fine blade of the grinder once more. Stuff the casings and twist them off into six-inch links. Parboil the links (without separating them) in gently simmering water for 20 minutes. Place the franks in a bowl of ice water and chill thoroughly. Remove, pat dry, and refrigerate. Because they are precooked, they can be refrigerated for up to a week or they can be frozen.

Preparing the Casing
Snip off about four feet of casing. (Better too much than too little because any extra can be repacked in salt and used later.) Rinse the casing under cool running water to remove any salt clinging to it. Place it in a bowl of cool water and let it soak for about half an hour. While you're waiting for the casing to soak, you can begin preparing the meat as detailed above.

After soaking, rinse the casing under cool running water. Slip one end of the casing over the faucet nozzle. Hold the casing firmly on the nozzle, and then turn on the cold water, gently at first, and then more forcefully. This procedure will flush out any salt in the casing and pinpoint any breaks. Should you find a break, simply snip out a small section of the casing.

Place the casing in a bowl of water and add a splash of white vinegar. A tablespoon of vinegar per cup of water is sufficient. The vinegar softens the casing a bit more and makes it more transparent, which in turn makes your sausage more pleasing to the eye. Leave the casing in the water/vinegar solution until you are ready to use it. Rinse it well and drain before stuffing.


Paul, this looks like a super tasty recipe. Did you forget to say how much beef and pork? This is definitely something Lenny and I would try.

Spaghetti Squash w/a Roasted Vegetable Smoked Meatball Sauce
for the meatballs
1 1/2lbs ground beef
1/2 lb hot italian sausage
sprinkle of parmesan cheese

mix and roll into meatballs. i used a mix of cherry/maple to smoke these. smoke for approx 1 1/2hrs or until done. you can also grill the meatballs

for the sauce

3 bell peppers - your choice of colors
1 large onion - quartered
1 head of garlic - cloves separated
1 lb mushrooms
3 large ripe tomatoes,chopped
1 large can of your favorite pasta sauce
1 tablespoon sugar
italian seasoning

place your veggies on a baking pan and coat with olive oil. sprinkle salt and pepper on them. roast at 400 until desired color and consistency or the garlic is soft.pierce your spaghetti squash and place in the oven as well.

while veggies are roasting. place the tomatoes,sugar and italian seasoning in a pot. bring to a boil and then simmer until tomatoes have broken down and sauce like.
