Scotch Eggs - Bam Style
Ingredients:
Breakfast sausage - I used jimmy dean
Hard boiled eggs
Bacon
Your favorite rub

Boiled and peel eggs. Wrap bulk sausage around eggs, wrap back around that,a little BBQ rub, cook in BBQ/smoker until bacon is cooked

Bam's "Baked Red-Potato Salad"

My favorite way to make potato salad

3lbs red potatos, baked and cubed
1 16oz container sour cream, none of that low fat crap
1/2 cup mayo or miracle whip
1 Tbls garlic powder
1/4 cup onion, minced finely
2 oz bacon bits, yes the real ones
1 tsp Tony C's or Zatarains Cajun Spice
1/4 cup freshly chopped chives
1/4 cup celery (i dont use it, missus doesnt like)
1 Tbls dill pickle relish
paprika for color
fresh cracked pepper
cheddar cheese (optional, i dont use it either)

bake and cube your potatoes.
mix wet ingredients with the spices in a separate bowl.
combine potatoes,celery,onions,wet ingredients
stir in bacon
sprinkle top with a little more bacon,chives and cheddar cheese
Good when warm, Better when you eat 3 hours later, Great refridgerated overnight

enjoy

Stuffed Meatloaf

Onions,mushrooms,garlic,various cheeses

Make your favorite meatloaf, lay it out flat and stuff with your favorite ingredients. I smoke/BBQ my meatloaf. You can also cook it on a grill using indirect heat.

Alright, since you INSIST, June 30th I will be throwing my annual July 4th cookout on June 30, (the Saturday before). If you can make it to my little corner of the country, you'd be more than welcome to partake in the home smoked butts, some STD Burgers, and some Nathan's Hotdogs! And since its SC, you dont have to worry about having those stupid little fireworks that "Emit showers of sparks". We can use the good ones here! Unlike NC... :D

I was able to convince my wife to let me try your Scotch Eggs though! WOO HOO!!!

On the smoker/BBQ? I use a spicy sweet rub when I BBQ and while the rub on the scotch eggs is not a must it does add a little something.

I think I may have to make these for the crew this week :)

I think Im going to do them over charcoal with some hickory wood for smoke. I have a BBQ rub by McCormicks that I doctor up with more garlic powder, onion powder, and a dash of ground cheyenne pepper. It also makes a GREAT rub for pork and chicken.

***Btw, that invite goes for just about everyone.

I would use indirect heat on those on your grill. As you know the bacon has a tendency to have some flare ups.

Oh yes. Ive had more than my fair share of flare ups. Im sure just talking about it will illicit some wayward comment directed at me. Oddly enough, Ive never caught a charcoal grill on fire. Just a gas one. Once. It was bad. Not exactly my shining moment of "manly" things to do. I DID get the fire put out before it completely melted the propane hose though. Thank God for fire extinguishers.

When I smoke, I keep the coals off to the right side and the food on the left directly over a water bowl.
