OK... the first part of this recipe is how to make the candied bacon... which is quite good all by itself... the second part is how to add that to Chocolate Chip Cookies! ;)

Candied Bacon

It’s really easy. Start off with thick cut slices of bacon placed on a foil-lined pan, and sprinkle generously with brown sugar.

Bake in a 350 degree oven turning once for about 20 minutes until your bacon looks brown and crispy. Let it cool on a wire rack. If you’re looking for a snack, just cut the candied bacon into 1-inch pieces and voila, an addicting and satisfying munchie. Just try to stop yourself from eating every last piece.

Candied Bacon Chocolate Chip Cookies

Ingredients:

For the candied bacon:

8 slices center cut thick bacon
1/2 cup brown sugar

For the cookies:

2 1/4 cups flour
1/2 teaspoon baking soda
3/4 cup butter, melted and slightly cooled
1/2 cup white sugar
1 cup brown sugar
1 Tablespoon pure vanilla extract
1 whole egg
1 egg yolk
2 cups semi-sweet chocolate chips

Directions:

1. Preheat oven to 350 degrees.
2. Place bacon in a single layer on a foil lined sheet.
3. Sprinkle brown sugar on top of bacon strips. Bake for 18-25 minutes or until crispy, making sure to turn bacon over after 10 minutes.
4. Remove from oven and place on a wire rack for cooling. Once bacon has cooled chop it finely.
5. Reduce oven temperature to 325 degrees.
6. Sift flour and baking soda.
7. In a medium bowl, cream butter with the white and brown sugar.
8. Add vanilla, egg, and egg yolk to the bowl and beat until light and creamy.
9. Add flour mixture and mix well.
10. Add diced candied bacon and chocolate chips and stir until just combined.
11. Place golf ball sized balls of dough on a parchment lined cookie sheet and bake for 13-15 minutes or until edges are brown. Remove from oven and let cookies sit on the pan for a couple of minutes before placing on a wire rack.

I'm in for the candied bacon, just not for putting it in the cookies. :laugh:

I've had candied bacon before... I am gonna have to try making some candied bacon and then putting it in premade CCC dough... cheating I know... but worth trying once. If I only make a few cookies at first... then I will have all of that lovely candied bacon to snack on even if it does not work in the cookies! ;)

Hmmmm the mustard idea is intriguing. This time I didn't need to toothpick them as I had 10, sitting nice and tight in the pan. Normally I trim the to get that perfect rectangle look, just not this time.
Im not a big fan of dry mustard, but love yellow mustard. And Im all about experimentation with other people's recipes.

Toothpick, I can do. I dont need it to look pretty anyway. As long as it tastes good, Im a happy camper.


Not a big fan of hot dogs.Unless there 4 legged.:lol: But these are pretty good and super easy.I love easy.BACON & CHEESE

Score hot dogs lengthwise; stuff each with a stick of cheddar. Wrap with bacon and grill until crisp. Serve on soft buns with fried onions.
I love hot dogs. And bacon. And cheese. That looks REALLY good.

I'll have to post my hot dog experiment gone AWESOME sometime this evening. I'll try to remember. Did I mention that its made with AWESOME?!? And then deep fried?!?!? IN MORE AWESOME!!!!!

Some people actually make chocolate chip cookies out of the dough, or so I hear. If I mix up a batch it just disappears. Weird.
NO WAY..... That happens here too!!! Of course, then I get to hear "You shouldnt eat that raw!!! ITS BAD!!!!" I turn around with cookie dough in my beard and chocolate on my fingers, trying to figure out what she's talking about and where my cookie dough went.

According to my hubby, my cookies suck so I don't make them anymore. I buy the dough and then the kids eat it before I can cook it.

Ok, so recipe for the above things... I dont even know what to call them (Tater Dogs?). I got the idea from watching Iron Chef America, Tailgating special. Iron Chef Morimoto made something like these, and I thought they looked like they would be AWESOME. I was right!

I used red potatoes, but Im sure just about any potato would work just as well.

It takes one potato per hot dog.

Wash the potatoes thoroughly. Peel if desired. I was being lazy and did not peel them, and they came out just fine.
Using a cheese grater, shred the potatoes on the "fine" side.
Put the hotdog on a wooden skewer
Pick up a handfull of the finely shredded potatoes, and squeeze them over/around the hotdog. Make sure they are squeezed evenly around the entire hotdog, then give it a little extra squeeze to drain some of the 'tater juice out.
Using a pair of tongs, holding the skewer, carefully place it into a pan of hot oil and fry, flipping once, until the potatoes have browned and crisped all the way around.
Remove from oil and place on a paper towel lined plate and sprinkle with seasoned salt to taste.


The homemade tater chips are beyond simple.

Again I used red potatoes. ( I just happened to have a couple left in the bag)

Using a mandolin (not the musical instrument), slice the potatoes as thinly as possible. Place them in the hot oil. Stirring and flipping to keep them from sticking together and to ensure they all cook evenly. Cook until they just start to turn brown at the edges. Remove and place on a paper towel. Add salt to taste.

And then all you have to do is eat, sit back, and enjoy the sounds of your arteries clog and your pant seams become more stressed. :D

Come up my way for Thanksgiving. Im smoking a turkey breast with bacon in the cavity. Once the turkey is cooked, the bacon comes out and will be skillet fried to crisp it up a bit, then crumbled and mixed into garlic red skinned mashed potatoes. And trust me... There will be plenty to share.

And maybe some Scotch Eggs again... or a Bacon Explosion...

Or a Bacon Turtle. A Bacon wrapped hamburger with hot dogs in it that give it a turtle shape.

Welcome to the CC FA club Magnus. We are working on getting rounder together. Mostly with bacon. We've deemed it a health food. :laugh:
And I'M the one on a diet! And yes, there have been two independent studies that prove bacon is a health food.
