I'm not allowed to buy anymore. Saying this myself doesn't mean much but having the lady say this means a ton. She approved the trade which means she's in charge now :p

1. 5/13 - It smells so freakin' good in here right now...

Every time I make caramel I am surprised at how long it takes...2.5 hours of watching and stirring.

Pull it off 2 degrees too soon, and it's ice cream topping. 2 degrees too late, and it's rock candy.

I can't be 100% positive that I pulled it at the right time until the "morning". There will be a follow up report in 8-9 hours.

I made a taffy years ago for Christmas... can't remember much except that it took forever! I don't think I could spend the time making caramel now :/ When I made pralines 4 hours was the end of the line for me and it STILL ended up being the sugary pralines and not the caramel ones :p I shipped out 5 boxes with pralines, had 3 waiting to ship until I got more info... those 3 were as hard as a rock and I didn't ship them LOL The next goodies I make will go to them first =]

2. 5/13 - Half the batch of caramels will get a sprinkle of very coarse sea salt, after they are cut to tootsie roll size. Have you folks tried caramels with extra coarse sea salt sprinkles?

Mmmm, have never heard of such a thing, but it may be like salt on watermelon? Sweet and salty? I am going to hunt some easy candy recipes for my cookbook! Christmas is just a few months away :p

5 hours until I get ready for work :/ My first Monday on days =] I am kind of excited like going to school again :p
