Vegan?

OK, strange request. My mom is working the voting tables for election day, and she was assigned to a church/temple... not sure what they call it, not sure of the religion. But she was told to bring lunch... only it has to be 100% vegan. Not vegetarian... VEGAN. Can someone suggest something we can make for her to eat that is low calorie and 100% vegan with no baked goods/bread involved in any way? Has to be packable in a cooler and can be microwaved if need be. Thanks!

I know it's a challenge - I have family who had a vegan diet for many years. Loads of fun at Thanksgiving dinner.

However, a vegan diet does not exclude bread........ it excludes all animal products.

Because of the additional bread restriction, I suggest rice crackers (some are seasoned and not too bad!) with hummus spread (made with chick peas, often in different flavors), which you can buy in a small plastic container at most grocery stores. That, along with a salad that has no animal products or croutons in it should get her through the day.

Cool, I'll give her the idea. She's panicking because she's afraid the food will have her in the restroom all day. LOL! That could solve that issue.

If I am not too late, you may try also any soy products, or most of them at least that are not mimicing meat. Also almond milk or soy milk is good for vegans. It of course depends what kind of vegan are we talking about. A friend who is vegan, had a period in which she was supposed to wait the fruit to fall down from the tree to be able to eat it... it was a short period though :D
