VG:PG Ratios... What does it all mean?

Part of the PG/VG ratio issue is personal preference. Another issue is the balance between vapor and taste. (high VG makes more clouds, High PG tends to bring out stronger flavor) Then there is the issue that some folks are sensitive or allergic to either PG or VG. Oh wait, I thought of another issue: some folks like a thinner juice ( more PG) to help with wicking issues.
It also depends on your rig. I vape 70PG/30VG in my tanks but drip the opposite mix. I like the cloud on my mod and the hit is still intense, while the tanks give a weaker hit so I up the PG to pull more flavor out. It really comes down to personal opinion so use whatever juice gives the desired result.

regardless, PG gives throat hit and carries more distinct flavors than VG. VG produces more clouds than PG and is much easier on the respiratory system for most people

Personally, I'm moving into heavy VG territory. 5% Distilled Water / 5% Pure Grain Alcohol / 5% 0.9% Saline Solution / +/- 5% Flavoring and 80% VG. No issues with thickness or flavor.

Awesome. I've been looking at getting into that... Is it as daunting as it seems? Or is it like wrapping coils? Rebuilding sounds much scarier than it is. Is DIY liquid the same?
In my estimation, DIY liquid is not rocket science, though a superior tasting eliquid might be.
