Has anyone attempted a wine flavor? I'm working with organic flavors, and I have a couple of wine grape extracts, but I feel like there are a number of flavor notes missing from the grape extract. Any ideas?

I haven't done an extraction or infusion, but I've used FlavourArt's Red Wine and White Wine flavorings. They taste and smell like the real thing. The Red Wine is a dry one, and a strong flavoring. If I liked plain red wine I'd vape it around 2%. I use it as an occasional ingredient at fractions of 1%. Their White Wine blends really well.
