New Mexico State Question "Red or Green?"

alien or a human. .....lol no not really, it refers to food.
The New Mexican Chile is a pepper, it is served
buy its self not with beens or rice it is a chili pepper eaten with everything from hamburgers to eggs and bacon. It is so popular, it is served every where in New Mexico, from McDonald's to items at 7/11 which are red and or green chili. It is only grown in New Mexico with a small few growing else where in private gardens. The most popular is Hatch Green Chile, its amazing in taste and everyone has their secrets to preparing and cooking however it is so simple as instead of mayo or musted you add Chile sauce. The taste of the Chile is so unique as it is not like Jalapeños or red peppers which are popular. However it can be hot if grown to be and it also can be flavorful with no heat what so ever. Its Colors are Red and Green these are different stages of growing and at times different strains of Chile. The NM Chile is now bread with Jalapeños, and just about every other pepper available, some very good, however none are as good as the simple natural Hatch Red Or Green. It is offered at every fast food place from subway to Little Cesar's, it is canned and sold else where however it is not at all the same, chili is usually best prepared fresh or from roasted frozen, or also best in a ristra, which is dried chili's tied to togeather for storage, then when ready to be prepared they are grounded and prepared similar to gravy or sauce. NM Chili has more vitamins C than oranges and when not fried is very health.
