Chicken Cacciatore tonight with green beans, mashed potatos and jello on the side. Most people eat the Cacciatore with rice. But for some reason my mom always put it over mashed potatos. So I do too.
I made spaghetti sauce without meat so I could use some for the cacciatorre (mixed with the broth from the boiled chicken) and put the rest in the freezer in a smaller and larger container. Next week I will add hamburger and Italian sausage for Spaghetti to the larger portion and use the smaller portion to go on Meatball sandwichs the following week.
I love it..3 meals cooked in one pot! o.k. so it's a big pot!

That's smart cooking right there, Mary Kay! :thumb: I do something similar whenever I make chilli. The first night is chilli & cornbread, then leftover chilli gets split into 2 batches. 1st batch is for chilli cheese dogs, of course  and the 2nd batch is for Frito Pie

Gotta love the whole "Three meals from one pot" concept!
