A new "What's for Dinner?"

You guys have GOT to try this really simple but yummy chicken recipe - I have made it twice, it is SO good and SO easy!!! buy a package of chicken tenderloins. The only hard part about it is the cutting the tendon of the tenderloins, I have to watch some techniques on doing that more effectively. But otherwise, so easy!!!
Dip them in melted butter (be generous) then season them top and bottom generously with salt, pepper and garlic powder. Cook them on a baking sheet at 350 degrees for about 45 minutes. Done! You do not grease the baking sheet. They shouldn't stick much if you dipped them well. I am considering trying to dip them in something other than butter to make it a little healthier, like olive oil or something. Also makes for a messy baking sheet so I may also try lining the sheet with foil and then placing the chicken on. Turns out really yummy!! Serve with your fav side dish!

I had a second thanksgiving tonight at my dad's!! OMG he went all out!!! Appetizers included shrimp and dip, hor derves, devilled eggs, cheeses, olives, spinach dip and bread, etc....

Dinner was a delicious 30 lb turkey, more veggies than you can name lol: cheesy cauliflower, some kind of carrot and pea mix, corn, green beans, asparagus, potatos with gravy, also yummy stuffing of course, cranberry sauce, green bean casserole and a few other casseroles too lol - dessert was pumpkin pie or blueberry pie with cool whip on the side...

So...I was feeling strangely adventurous tonight when it came to dinner (which almost NEVER happens!); and baked some seasoned chicken, made some cornbread, and a cabbage side dish that I came up with after searching an hour for something that I could make with cabbage (I was really wanting some cabbage dangit! :D).

I sauteed some onions in butter, added chopped cabbage and salt/pepper, then just before the cabbage started getting soft I tossed in some fresh diced tomatoes and cooked for another minute; just enough to soften the tomatoes. Just before I put the tomatoes in I tried a bite of it, and I was so surprised that it tasted good that I said "WOW!" really loud and made my husband come right away to taste it! Lol! It is SO GOOD!

Unfortunately, the side dish was the best part of the meal lol; it was the last of my chicken seasoning and I guess all of the salt was gone, because the chicken came out bland (I dipped it in ranch to eat); and the cornbread seemed to have overcooked a bit lol!

Tweaks that I'll do next include trying it without the tomatoes, and not over-sauteeing the onions :p I couldn't get the cabbage cut through and the onions ended up cooking longer before the cabbage was put in than I meant for them to, so they came out super soft (almost mushy) while the cabbage was still partially crunchy (like it was supposed to be); strange switch in texture when eating lol.

I'm not an adventurous cook, in other aspects of my life I am, just not cooking. This is the first time in my life that I ever just "flew by the seat of my pants" rather than follow a recipe. I've made tweaks to recipes, but never randomly putting parts of them together.

Next I'm gonna have to try cabbage rolls, I'd have done them tonight but didn't have tomato sauce. They sound like meatloaf wrapped in cabbage!
