A new "What's for Dinner?"

Hambrger helper beef pasta. It was kind of bland so I added onion, my garden pimento and some spice. It was ok but after we topped it with some sour cream it was better...lol Green beans and chocolate pudding with whipped cream for dessert.

It occured to me that I always talk about dessert..being diabetic you may wonder..most are sugar free and I don't eat the others unless it's just a half portion. Studies show that small amt's of sugar are fine..most things already turn to sugar in your system anyway. My blood tests show I am doing fine.

MK.I think we all need some sugar sometimes..I'm glad you're doing well.
So..I have one of those Magic bullet things, I just realized that 1/4cup of heavy whipping cream and some Hershey syrup - 5 seconds make a pretty good mousse. It's not the healthiest but keeps those chocolate cravings at bay for awhile! Besides it's not full of preservatives and stuff.
actually they have sugar free Hershey'..not sure how that would be.

I have been trying to figure out how to make cocktail sauce. There used to be one at the store that didn't have added sugar, but they don't sell it anymore, and every recipe online uses ketchup. I have a giant bowl full of tomato paste, vinegar and horseradish. I can't get it right.

Anyway, I'm having boiled shrimp and... sauce.

Tonight, and most every night, I've had a salad with chicken and balsamic vinegar and olive oil dressing, with a twist.

I shred a pre-cooked chicken breast* into a frying pan or oven pan (cooking method depends on my mood and time). Then I pour olive oil over it, then the balsamic vinegar and heat for about 20 minutes on low heat. I use artisan whole head lettuces from Costco, and a mix of iceberg, cabbage and carrots, also from Costco, tear them up in a large bowl, put the meat on top, then pour the warm dressing over it.

For me this is yummy. I really hate ice cold salad, so warming up the meat works for me. Other meats I use are salmon, tuna, and hamburger on occasion.

Love salad since it fills you up without making your stomach feel "heavy". In the summer that's best for me else I'd probably not eat at all.

Winter is a whole 'nother story :p

*I usually pre-cook a lot of chicken chicken breasts to have on hand because I make my own cat food (Halo style) and "chunk it up" by grinding a chicken breast quickly with my Ninja.

Outre, I've been doing a lot of salads too, since good regional produce is available right now. However, I would never not eat at all!! :laugh:

LOL, yeah, but then I eat stupid, like half a watermelon - then wake in the middle of the night wondering why I'm craving saltine crackers.

I live in a dry desert, even today with the monsoonal flow up from Mexico our humidity will be only 25% by midday. It will be cooler though, only 96 degrees or so, but by the 20th we'll be back in the 110s. I just hate eating when it's hot, so I stick to salads most of the time with protein thrown in to keep it balanced.

Maybe one day this week I can fix up my favorite cold sammich, tuna, tomato, lettuce and banana on rye bread. :drool:

It may sound odd, but it's so darned good I can eat it without bread ... oh wait, that sounds like more salad ... :p

It all sounded great up until......BANANA!?! :banana:

This reminds me of my brother and his PBJ + salami.

I know, I know.

When my mom first made it for us when I was 11, I was like "ewwww...yuck! Mom what is that?"

To which she informed me that I didn't have to eat it, but there wasn't anything else made or available.

Still believing it would be unbelievably gross I sat down at my plate and ... oh my garsh was that good!

In the years following we kids would fight over the last tuna in the bowl and bit of banana.

My husband had the same reaction when I introduced him to it. Now he asks for it often enough that I make fun of him repeating his words "you're fricking nuts, I am not eating that" ... he is such a food junkie , rofl!

I'm almost sorry I also introduced him to deviled ham mixed with cream cheese, served on a Ritz cracker and topped with a grape. every New Year's he "has to have 'em" with our champagne.
