Tonight, and most every night, I've had a salad with chicken and balsamic vinegar and olive oil dressing, with a twist.
I shred a pre-cooked chicken breast* into a frying pan or oven pan (cooking method depends on my mood and time). Then I pour olive oil over it, then the balsamic vinegar and heat for about 20 minutes on low heat. I use artisan whole head lettuces from Costco, and a mix of iceberg, cabbage and carrots, also from Costco, tear them up in a large bowl, put the meat on top, then pour the warm dressing over it.
For me this is yummy. I really hate ice cold salad, so warming up the meat works for me. Other meats I use are salmon, tuna, and hamburger on occasion.
Love salad since it fills you up without making your stomach feel "heavy". In the summer that's best for me else I'd probably not eat at all.
Winter is a whole 'nother story
*I usually pre-cook a lot of chicken chicken breasts to have on hand because I make my own cat food (Halo style) and "chunk it up" by grinding a chicken breast quickly with my Ninja.
