Basic 18650 question

So I've been gaping for about two years, graduated from the basic pens to building only in subohms (.2 most often) with mechs and regulated mods. I understood how batteries worked but now I'm not so sure I'm 100% on it.. I know a battery puts out 3.7v (4.2 charged fully) and that as the battery is used the voltage will drop accordingly (unless in a regulated). But what about mAh? I mean 1600-3100 I assumed the bigger number the more space for energy and longer the batter lasts.. So why do I charge on my nitecore and read that it's at 3.7 volts but only say 750mah instead of 2500? Is it because the number of mah to each .1 of a volt is so much bigger?

mAh = milliamp hours.
It is a way of describing the energy content of the battery
The actual energy content also depends on the voltage of the battery.

2: yes the bigger the number the more energy is stored when comparing batteries of the same type.

3: my guess is your nitecore is showing you 750ma ?
Or maybe you put in the battery when it has 1750 mAh remaining so when you put it on the nitecore, it puts in another 750mAh in and that is what it is reporting to you?
