Sweet Gingerbread is one I have to let steep a little. Not because it tastes bad fresh mixed, it actually does taste very good. But for me when it's fresh mixed I find the ginger to be a little strong. After a little steeping the ginger mellows some and the rest of the sweetness and complexity comes through very nicely.
So be sure to save some so that you can try it steeped as well.
