differences between 304/316/317/410/430 stainless steel?

I think they are all good for vaping. Basically the higher the grade the less nickel/ the less oxidation.

The price goes up the higher the grade. I think 400 and above is no nickel and best for surgery for people who are sensitive to nickel or have more acidic PH?

410 and 430 work great for TC.
They come in at slightly lower ohms than 316, but are a bit more accurate for TC (not enough to really notice though)

Honestly the only way you're going to see much of a difference between all of those grades, is if you plan on hardening/annealing the wire for some application, or if you need it to be resistant to a specific chemical like chlorides or sulfuric acid or something. All of em are about the same for vapeing.

You do not need nickel to vape in temp control mode. You just need to have a mod capable of manually inputting the tcr value for the wire type you are using. You get the tcr from steam engine. Evolv used nickel at first for the dna 40 because it was readily available and has a very steep tcr.
