I love cinnamon roll lately and my wife put me on a ordering ban for supplies for a few weeks and can't buy anything, so I decided to try making a cinnamon myself. Roughly broke up 3 cinnamon sticks in about 50ml of vg... heated it slighty and shook the heck outta it for awhile and then let it sit for about 24hrs. Filtered this and gave it a test. This is a rather nice cinnamon flavor, though it is a pain to do. I think I'll stick to buying cinnamon roll flavor, but all in all, I am pleased with my results and now want to give other extractions a shot. Anyone have any experience with diy cinnamon?

Consider extracting only "true cinnamon", also called Ceylon cinnamon. Most of the cinnamon you'll find in grocery stores is a cinnamon relative known as Cassia. Cassia cinnamon contains coumarin, which is moderately hepatotoxic in humans. True cinnamon still contains coumarin, but in much smaller quantities than in cassia.
