DIY flavourings in the kitchen

I have read a couple of posts now where the flavouring for the juice has been made at home.
Example, I read the guys post (sorry I cant find the post again) about experimenting with the mint leaves and it turning in to a real nice flavour.
At the moment there is a post on the coffee thread saying how to do your own coffee flavouring.
I know its probably just common sense and I would like to think I am not stupid but doing the flavours like described never even occurred to me.
I am now thinking I will do some coffee flavouring of my favourite coffee, grow another mint plant and am now thinking of other flavours to experiment with lol.

A question tho. Could lemon and lime flavours work? I.e grate up some of the zest of the lemon and limes cover with the liquid slightly heat stir etc. Leave to stand and then filter through the liquid leaving the fresh concentrate?
Fruit flavours I am not keen on but my mind is running overtime thinking of what flavours I could make with whats at hand in my kitchen ha ha

I do remember reading about someone researching whether or not certain types of flavors had any warnings against inhalation. Whatever you choose to do, do it safely & be informed.

I agree, extractions threads really make you think, don't they?! Kind of exciting stuff.
