Ethyl maltol, 2-ethyl-3-hydroxy-4-pyrone, 2-ethyl pyromeconic acid, or C7H8O3 is an analog of maltol, where the methyl group on maltol is substituted with an ethyl group. It is a stable white crystalline powder at room temperature and easily dissolves in many polar liquids. Ethyl maltol has a melting point of between 89 and 93 °C, and a boiling point of 161 °C.
This chemical has a sweet odor that can be described as caramalized sugar and cooked fruit. It is an important flavourant for the food, beverage, and fragrance industry. Ethyl maltol is non-toxic, highly pleasant to human sense of smell, and easily detected by the human, with as little as 10 parts per million perceivable in air."

Ethyl Maltol can also be referred to as a "flavor enhancer", which has the ability to smooth out a taste in something. In the DIY realm, it is especially notable when used with tobacco absolute, which can have a very bitter high-end taste; the EM will sort of even out the flavor to make it more palatable, enhancing the low tones and taming the high tones of a complex flavor.

I'm wondering if it would cut the bitterness of the Coffee Bean flavor liquid I made with Capella drops. I have mixed it with the Boston Cream pie to add a little sweetness and that's pretty good, but if I could have just the Coffee Bean flavor without the bitterness without adding another real flavor that would be great.

It sure wouldn't hurt to give it a try. That's the purpose of Ethyl Maltol.
I would love to find a source for LIQUID EM, it is a little tricky to dissolve, first should be crushed and then heated to dissolve in alcohol (Grain) or water, or VG as well. Draw off the liquid and use it a ml at a time to sweeten things up to taste. Excess crystals will reform after it starts to cool, just use the liquid. If I understand it right, Ethyl Maltol will dissolve to the highest possible concentration in alcohol.

I went through a process of getting a saturated solution of EM. Watch the heating. It dissolves very fast when heated but the crystals reform quickly. One reason that's bad is that if you crush the EM it dissolves faster, then when it reforms they are big again. Neat.

Anyway, I dissolved it in ethanol, drew off the liquid after the crystals reformed, added more ethanol, redissolved, drew off, added more, etc. until very little reformed. I got about 10 ml of saturated EM/ethanol. You only need a few drops in 15ml, so this will last a while.

By the way, I made a EM/Lorann Marshmallow VG mix. Quite good actually. Wish I counted the drops, but I added EM until I kind of liked it and then the Marshmallow at about 10%. Mmmm.
