I upgraded my desktop a few days ago to 24H2.
I then thought I'd do my 2014 era totally not meeting minimum requirements laptop too so I did.
The laptop was a bit of a challenge but I got it,

Does this mean for example, if my computer dies I can't pull the hard drive, dock it as an external drive on another computer and pull off my files?

Yes that is what it means. This is known as Microsoft Ransomware! You should store the encryption key in a safe place (that's another story of where to find it). Although right now you can turn it back off in the Settings thank goodness (but for how long?). The encryption key is linked to your Microsoft account, so in that sense it is seamless.
