Help with "tartness" in fruit flavors

Newbie at the DIY and could use some help. I've been working on blackberry, peach and strawberry flavors. The wife loves Virgin Vapors blackberry swirl. I've used FA Blackberry, TFA blackberry, VZ blackberry and a couple others. I can get the body of the blackberry flavor but that tartness with these 3 flavors has been elusive. Her BB Swirl from VV is super aromatic and she likes that. I've tried combinations and levels of TFA sweat tart, sweet and sour at different levels and it helps but leaves something out. Can anyone think of anything I might try?

Forgot to mention, I also tried adding lemon juice in varying amounts but not there yet.

What about adding some cotton candy and some cream. I add. 1-2 % em (cotton candy) to my fruit flavors and it seems to mellow them out. Maybe a little sweet cream or whipped cream. Does she want a sweet tarts type of taste? If not I would drop the tart and sour and just add the cream. Marshmallow may work also but I don't know about adding tart and sour to cream or marshmallow blends. Just thinking off the top of my head of what will mellow out your juice flavors. Hope it helps

gofishtx, it's not the cream flavoring. I think I'm starting to get a handle on that part of it. It's totally the tart bite/smell that is on fruit that just gets ripe. Not the overly ripe stage that seems a lot of flavorings have to them. I would say that the juice manufacturers have the essence of the flavor down pretty good but the tart is hard to get into it for me. and yes, I have tried the EM 10% and cotton candy and those aren't doing it either.

If it's body or thickness your looking for try a little marshmallo (1 - 2%). I would stay away from the EM for fruit and use sacarlos (Sweetener) at .5 - 1% but for the most part I like to stay away from the sweeteners as they can actually reduce the taste of the actual fruit. Fruits usually don't need it. EM may help with body and thickness but will only have a slight perception of sweetness and again if you want to go that route .05 - 1% is recommended. But if it's a body and thickness your after marshmallo works far better and will work with tart and sour if that is also what your after.
