7 wraps on 2.5mm with 26g wire will come out to about .8ohms per coil, or .4 if you do dual. So either way, yes.

Probably? Who makes the jig you got? Is it just one of those telescoping tools that has a few different widths on it? 2.5 is pretty common; it might have a 2.4 or 2.6mm size instead.
