Made some Chocolate Baby Backs last night, beyond awesome!!!!!!!!!!


here's the rub
Cocoa-Rubbed Baby Back Ribs

1⁄3 cup unsweetened cocoa powder
1⁄2 cup light brown sugar
3 tbsp. ancho chili powder
2 tbsp. kosher salt
2 tbsp. granulated onion
1 tbsp. granulated garlic
1 tbsp. dried oregano
1 tbsp. dried mustard
2 tsp. dried ginger
2 tsp. ground cinnamon
1 tsp. ground allspice
2 racks (3 lb.) pork baby back ribs

rub ribs, wrap tight in foil, in the fridge over night

cook ribs how ever you do it, low & slow is the key

here's the sauce

  • tbsp olive oil
  • 1 small onion, finely chopped
  • 1 tsp chili powder or chipotle chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp mustard powder
  • 1/2 tsp freshly ground black pepper
  • 1 tsp salt
  • 2 cloves garlic, finely chopped
  • 1/2 cup (125mL) ketchup
  • 1/3 cup (80mL) honey
  • 1/4 cup (60mL) lime juice
  • 1 tbsp Worcestershire sauce
  • 2 OZ unsweetened cocoa (the baking kind, ya know looks like a candy bar)

I didnt use ketchup, went with tomato sauce and added some apple cider vinegar

Yesterday, Oklahoma had one tornado in yesterday's storms in the far NW... but today, we had several. This was the latest in the year to finally get our first tornadoes of the season.

For a while, I thought I was going to miss any action until a little before 8pm when I noticed a circulation starting in an area that often ends up in my area. At 8pm, I was certain that something was heading my way and I got my things together so I could head to work ( it has a basement ) and hopefully get there before the rain ( not to mention any possible tornado ). That tornado did hit a small town to my west, it kept it together long enough to pass to the north of me by a couple miles or so. I don't know of any damage here in my town...

Small spin ups like this one are often ( almost always ) over looked by the meteorologists and weather personnel on the news stations until they finally are ready to drop a funnel. Since I watch this area knowing that it's a common location for them to start up in and will end up in my area... I've only missed a couple at most.

The down side... There was a major storm chaser convergence at a local eatery ( Buffalo Wild Wings ) just about 8 miles north of me after this had moved past me. I'd been focused on the storm so much, I missed a chance to meet several of the chasers I like to follow when they are out. Specifically Mike Olbinski ( from Phoenix, Arizona ) whom actually uses some of my customized color tables on his radar program ( GrLevel 3 ) and Daniel Shaw from Australia... both would have been very cool to meet in person. :D
