Hope it's ok to chime in. I'm wondering what the different between a coil that doesn't read (I'm pretty sure that means a short) and one that reads way too high.

mainly use kanthal anyway...Melted metal? If you are heating coils up to the point of melting the wire you are doing something way wrong. For the OP @Michael woodward it is not recommended to heat Stainless Steel passed the point of slightly bluish tint and never make it red.
well I have been building for quite some time now just that I always used my mods to see the resistance ( I know I shouldn't ) but I bought a geek vape ohms meter so wasn't sure.When heating up any coil, the resistance will change. Some metals will have a bigger difference than others, but all will show some difference with the right equipment.

Stating something that might be misread or misunderstood shouldn't be stated without proper explanation... all we need is a newbie that thinks that you mentioning copper means that it's a metal used with vaping and we end up with a news article about it.
