1 pound smoked cooked ham cut into chunks trimmed of fat*
1/2 cup mayonnaise
1 tb onion powder
1 tb paprika (could use smoked paprika if you want it smokey)
1/2 tsp turmeric
1 tsp dry mustard
1/2 tsp garlic powder
dash hot sauce (Tabasco recommended)
Salt and Pepper to taste
Dash or two of Worcestershire Sauce optional (try it without 1st)
Dash or two of prepared mustard also optional.
You should probably trim most of the tough skin off or you will get chewy pieces in the mix (although the skin has tons of flavor). Dump the ham into a food processor and grind it up to pulverized ham-sand goodness. Add mayo and/or oil and/or water to get it to a smooth mixing consistency. Add spices. The fun part is to tweak it to taste.
* I substitute canola oil for the ham fat. You can use water too if you want it to be a light texture, but it needs some fat. I also sometimes cut down on the mayo (and use no-cholesterol mayo) I don't want it to be mayo-ish.
