I use NY cheesecake between 5-7%. Does take a bit to steep but delicious when it does. Pop in some TFA Key Lime and enjoy.

Did you notice a kind of sour taste at first with the NY cheesecake? There was just a weird taste there for me that I couldn't put my finger on.

Never really noticed that. It may be a bad batch but give it a week to steep and see if it's better. For me it really hits its profile at about four weeks. When it does, it's spot on cheesecake.
